Course structure
The Italian Pasta Program is a 3 weeks full time course, with 5 days per week demonstration and hands on sessions. Moreover, an optional traineeship phase after the end of the course.
During the 3 weeks course the student will learn about:
- Fresh, dry, filled pasta
- Hand made pasta
- Pasta making using professional machinery
- Drying, pasteurisation and shelf life
- Historical background on pasta
- Setting, cleaning, maintenance of machineries
- Production process, Food cost and Waste management
- Pasta packaging
- Set up and equip a fresh pasta workshop
